Madagascan vanilla bean sponge

Fresh Madagascan vanilla gives this sponge its deep, unmistakable flavour. We split the pods and scrape out the tiny seeds, using real vanilla rather than extract, so its warm, floral sweetness runs through every bite.

Paired with fresh coconut, the vanilla becomes even more luxurious. The coconut brings a naturally creamy, mellow richness while allowing the delicate character of the vanilla to shine. Together they create a flavour that is fragrant, soft and beautifully rounded: sweet without being overpowering, rich without feeling heavy, and with the tiny vanilla seeds throughout the crumb giving you the unmistakable taste of the real ingredients.

Vanilla bean sponge

This is the Victoria sandwich, grown up. The sponge is named for the Queen, who is said to have taken a slice with her afternoon tea, in the years after the Duchess of Bedford made a habit of eating something at four o'clock to get through to dinner.

It is the plainest thing on this page and the hardest to hide behind. There is nowhere for a dry sponge or a cheap vanilla to go. Which is why, when a couple cannot decide, this is what we suggest.

Lemon zest sponge

Fresh lemons are at the heart of this sponge, bringing a bright, natural flavour that simply can’t be replicated with artificial flavourings. We use freshly grated lemon zest directly in the sponge, releasing the fragrant citrus oils from the peel and giving every bite a beautifully fresh, aromatic lemon flavour.

Orange sponge

Fresh mango and passion fruit come together to create a vibrant, exotic flavour that is both rich and refreshing. We use real fruit extracts to capture the natural character of each fruit, the mango bringing a smooth, juicy sweetness, while passion fruit adds its distinctive tropical sharpness and fragrance.

The contrast is what makes the combination so delicious. Sweet, mellow mango is lifted by the bright tang of passion fruit, creating a beautifully balanced flavour that never feels overly sweet. Paired with our fresh orange zest sponge, the result is fruity, fragrant and wonderfully tropical, with real fruit flavours at the heart of every bite.

Dark chocolate sponge

Good-quality dark chocolate gives this sponge its deep, rich flavour, with just enough bitterness to balance the sweetness of the cake. Using a high cocoa-content chocolate creates a more intense, rounded taste that feels indulgent without becoming overly sweet.

Paired with smooth salted caramel buttercream, the combination becomes irresistible. The buttery sweetness of the caramel is lifted by a touch of salt, which enhances the richness of the dark chocolate and brings out its depth. Sweet, salty and intensely chocolatey, every element balances the next, creating a luxurious flavour that is rich and satisfying without being too heavy.

Red velvet

Red velvet has a beautifully subtle chocolate flavour, lighter and more delicate than a traditional chocolate cake, with cocoa adding just enough richness without overpowering the sponge. Its signature deep red colour makes it feel that little bit more special, creating a cake that is as striking to look at as it is delicious to eat.

The perfect pairing is a soft, smooth cream cheese frosting. Its gentle tang cuts through the sweetness and complements the light cocoa flavour beautifully, while adding a creamy richness to every bite.
